Summer might not seem like the best time to open a soup restaurant. But soup makes everything better, even when it’s hot outside, perhaps especially during a pandemic. I guess that’s what Yuk Dae Jang is counting on because this upscale Korean soup chain quietly opened not one but two new branches, in Irvine and Buena Park, over the summer. They already had restaurants — and a strong following — in Gardena, San Gabriel and LA’s Koreatown.
Yuk Dae Jang specializes in seolleongtang (frequently spelled sul lung tang), yukgaejang and other Korean-style beef noodle soups made with rich, soulful bone broths. They opened here while dine-in was still prohibited, so they focused at first strictly on takeout and delivery. (They have since added outdoor dining.)
Their takeout packaging is luxurious. Dumplings and boiled pork belly come in beautiful boxes with bright red linings. Garnishes for the soups are packed separately so you can mix everything together at the last minute before serving. I’ve ordered delivery a couple of times already, and when my second order exceeded $50 it came in a handy insulated logo zipper bag that I now keep in the trunk of my car and use often when picking up takeout from elsewhere.
Most importantly, this soup is really, really good. The broth in the seolleongtang is so rich with long-simmered bones, collagen and fat that its color is snowy white. If you prefer more spice, get the yukgaejang, which is heavily infused with kimchi paste and red chili sauce.
